One of the most precious members of the Jaipur Group, Chef Meharwan Singh was raised in New Delhi while his family comes from Uttarakhand, a state near the Himalayan region known for the finest culinary families with a lineage of Garhwali & Kumaoni Cuisine. After pursuing a degree in hospitality, Meharwan started his career at Shangri-La, a five-star hotel in New Delhi, where he learned from the best chefs in the country. He later worked across other leading five-star hotel chains rising through the hospitality ranks in India. He moved to Ireland in 2007, joining Jaipur Group as one of the key chefs. Meharwan is currently the Head Chef in Jaipur Malahide and counts among his many specialities the popular Methi Makai Malai Gosht (Lamb), Seafood Curries, and Murgh Makhan Palak. We are incredibly lucky to have him as part of our team!

Santosh was born in Kerala, India, a region known as the ‘Land of Spices’. It is a region famous for its cuisine, including specialities with key ingredients such as chillies, curry leaves, mustard seeds and tamarind. Santosh started his hospitality career with one of the leading 5-Star hotels in India, working in different management roles across international cuisine restaurants, cafes, and bars. It was this same hotel where he met Asheesh Dewan, founder of Jaipur Group, a senior chef then. Santosh recalls this meeting as the ‘Fresh Lime Soda Incident’ which later led to him moving to Ireland to join Jaipur Group. He started his journey at Jaipur Group from Jaipur Dalkey when it opened in 2001. His love for Malahide could not keep him far for too long as he joined Jaipur Malahide in 2003. Santosh has worked across different restaurants and locations, generously passing on his knowledge with the larger Jaipur family as he celebrates his 20 years with Jaipur Group this very year. One of the dishes loved by our Captain in Malahide is Murgh Makhan Palak . His colleagues at Jaipur Group love his humour and his taste in Bollywood music. He likes to travel with the sole objective to try food across countries and regions. A cook himself, Santosh’s search for good food often lands him in West Cork where he likes to unwind. His most memorable food experience was eating oysters in Carlingford, County Louth. He describes “Malahide as a paradise land, where customers are well informed and well-travelled, they have the knowledge of food and they like to give their true feedback which helps us to serve them well.” Many of them are his friends, given his long association with Jaipur Malahide. The love from the people of Malahide passes through generations, with him catering to customers who now come down with children and their families. We are fortunate to have Santosh as part of our team. In his time off, he loves watching Amitabh Bachchan (a renowned Bollywood actor) movies. Meditation and Yoga practice are two secret ingredients that give him the peace of mind to spread happiness through his humour.
